Pistachio is a Persian world entered in the European languages through Latin language.
The most oldest effect obtained from pistachio in the world, is a half burnt wood piece relates to stone age discovered around the city of Fasa (Province of Fars) about one thousand years ago and now is kept in Pars Museum.

It is supposed that the pistachio tree is cultivated in the domesticated Iran about 3 to 4 thousand years ago and after Iran was transferred to other places throughout the world especially countries around Mediterranean sea. Among opinions discussed about the origin of pistachio trees, in addition to Iran, Afghanistan and Turkestan were also among them. Although, the current lands Iran, Afghanistan and Turkestan the geographic units with separate political borders.

The most oldest pistachio spots in Iran includes Sarakhs, Gorgan, Ghom and Rhodes. Also, as per the present documents, this product was also cultivated in Ghazvin, Semnan, Jiroft and Damghan for the last 1500 years ago. While, age of regions like Rafsenjan, Kerman, Sirjan, Yazd, Esfahan and Zarand goes between 100 to 250 years ago and the history of Shahr Babak, Zahedan, Saravan, Daregaz, Varamin, Abadeh and Darab was less then 100 years in pistachio cultivation.

At present province of Kerman and Rafsenjan regions are considered as one of the best areas for the cultivation of pistachio in Iran and the world.
Pistachio is rich and full of copper, magnesium and types of vitamins of Group B which strengthen the immune system in the body and prevents most of diseases.

Iran and U.S.A are two main countries producing and exporting pistachio throughout the world. So that, these two countries are producing about 70% to 80% of annual production of pistachio.

Grade of Pistachio
Green pistachio nuts with two peels is what type of pistachio? How many grades are sold in these type of samples and its grading types.

In general pistachio nuts are in two types, green and ripe and each with special properties and with different consumption. Green pistachio nuts are cut off from the tree sooner and its green color is its property and is use for export and also producing types of sweets and food industries.
Then the ripe pistachio are transferred to processing factories for double peeling which the first peel is separated and also is separated on the basis of size and color.

Grade of Pistachio Nut
After the primary peel of pistachio separated by steam boilers, the green pistachio nuts are separated by color diagnosis machines and divided in 6 grades. The first 5 grade A, B,C, D, E are healthy pistachio nuts which are sorted only from the color viewpoint and the last grade which is called grade F and are edged pistachio nuts which involves all the above grades.
